5 Creative Recipes for Crispy, Crunchy Roasted Chickpeas

Looking for a few easy, healthy snack ideas? When it comes to snacks that are delicious, it can be hard to find something healthy. These creative recipes help you whip up crunchy chickpeas for five ways of scrumptious healthy snack alternatives.  These five different flavor options are sure to please your palate - because chickpeas are great for you and the whole family. Make ahead and take on the go for even more healthy snack fun!

 

For Each Recipe You Will Need:

 

  • 2 15 ounce cans of chickpeas or garbanzo beans

  • 2 Tbsp. olive oil or coconut oil

Our Five Favorite Spice Combinations:

 

Cinnamon Roll
1 tsp. ground cinnamon
1 Tbsp. maple syrup

Garlic Parmesan
2 tsp. garlic powder
¼ tsp. black pepper
½ tsp. sea salt

2 Tbsp. grated parmesan cheese or a Vegan Cheese 

Curry Spice
1 tsp. ground cumin
1 tsp. chili powder
½ tsp. cayenne pepper
½ tsp. sea salt

1 tsp. mild yellow curry powder

Honey BBQ
2 tsp. paprika
1 tsp. cumin
1 tsp. chili powder
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. salt

1 tsp. Honey


Peppercorn Ranch

1 tsp. black pepper
1 tsp. parsley flakes
1 tsp. garlic salt
1 tsp. granulated onion
2 tsp. dill weed


 

Once you choose your favorite spice combination follow the instructions below to cook up the best crunchy chickpea snacks.

 

Instructions:

 

1.    Preheat oven to 400 degrees fahrenheit. Drain and rinse the chickpeas. Remove any loose shells from the chickpeas.

 

2.    Lay a few paper towels on a flat surface. Evenly spread chickpeas across the paper towels and leave to dry for one half hour.

 

3.    Line a cookie sheet with parchment paper or aluminum foil.

 

4.    Evenly spread the chickpeas across the lined cookie sheet. Bake for 40 minutes or until crunchy. If they are not crunchy, cook for an additional 20 minutes. Keep an eye on them, as they can burn.

 

5.    Transfer to a large mixing bowl toss chickpeas, olive oil and spice combination until well-coated.

 

6.    If cooking the honey bbq or cinnamon roll flavor, after coating, return the chickpeas to the oven for 5 minutes in order to caramelize.
